Chicken with 80 garlic cloves

Chicken, whole, cut into eight pieces

Pepper, freshly ground

Oil, grapeseed
2 tablespoons +
½ cup
Thyme, fresh
10 sprigs
Garlic, peeled
80 cloves
  1. Preheat your oven to 350F.
  2. Season the chicken with salt and pepper.
  3. Heat 2-tablespoons oil in a large skillet over medium-high heat.
  4. Add the chicken, and brown, about 8 minutes per side.
  5. Remove from heat, add the thyme and garlic, and 1/2-cup oil.
  6. Cover and bake for 1 1/2-hours.
  7. Let rest for 10 minutes before carving and serving.
Recipe adapted from Alton Brown's adaptation of a classic French dish. Or, maybe it was this recipe, because it's the same author with a slightly different recipe posted.
