- Heat the oil in a large heavy pot over medium heat.
- Add the flour and cook for 40 to 50 minutes, stirring constantly, to make a dark roux.
- Add the onion, celery, and garlic, stir to coat, and cook for 5 minutes.
- Add the okra, and cook for 5 minutes, stirring to coat the vegetables with the roux.
- Add the sausage, tomato paste, bay leaves, salt, and water; stir, bring to a simmer, cover and cook for 2 hours.
- Add the chicken, and cook for 5 minutes longer.
- Serve with rice.
