Beignets


Water
½ cup
Butter
4 tablespoons
Sugar
2 tablespoons
Salt
Dash
Flour
½ cup
Eggs
2
Vanilla extract
1 teaspoon
Cooking oil
Powdered sugar
  1. In pan over medium heat, combine water, butter, sugar, and salt. Boil and stir until butter melts.
  2. Add flour all at once. Cook over low heat until forms into a ball.
  3. Remove from heat; beat in eggs, until smooth and shiny. Add vanilla.
  4. Drop teaspoons of mixture into hot oil (I use a Fry Daddy Jr.—oil should be 375°F), turning to brown all sides.
  5. Dry on paper towels.
  6. Powder with sugar.
Serves: 12
