Blueberry bars

Butter
¾ cup
Brown sugar, packed
1 cup
Flour, all-purpose
1 ¾ cups
Salt
1 teaspoon
Baking soda
½ teaspoon
Oatmeal, uncooked
1 ½ cups
Blueberries, washed if fresh, or drained if canned
2 cups
Walnuts, chopped (optional)
½ cup
  1. Preheat oven to 400°F.
  2. Cream butter and sugar together.
  3. Combine flour, salt, and soda in a separate bowl, and then mix it with the butter and sugar until well blended; add oatmeal.
  4. Press half of the mixture into a greased 9x13-inch pan.
  5. Spread blueberries over the mixture; sprinkle with the remaining oatmeal mixture, and then nuts.
  6. Bake 25 minutes; cool 5 minutes before cutting.
Note: For kicks, I sliced out the bars and some ice cream with a biscuit cutter, and then assembled it into a blueberry ice cream sandwich (see photo).
